BOURBON BREAD PUDDING WITH BOURBON SAUCE 1 loaf Texas Toast, cubed         4 eggs        1 3/4 cups sugar        3 cups milk       1/2 tsp. salt      1/2 cup raisins       1/2 cup bourbon Soak raisin in bourbon for 20 min.  Mix eggs, sugar, milk and salt together in large bowl.  Add bread cubes, bourbon and raisins.Mix well and pour into greased baking pan.  Bake 35 min. at 350 F.  Drizzle with warm bourbon sauce. BOURBON SAUCE 1 cup sugar         1/2 cup light corn syrup          1/2 cup butter           1/2 cup bourbon Add all ingredients in a medium saucepan.  Simmer 2 min.

My favorite spring flowers are tiny purple violets and aromatic lilies of the valley, both magical announcements of spring, particularly in my native Minnesota.  After long winters of ice, snow and sub-zero temperatures, these amazing and delicate blossoms boldly proclaimed that, indeed, spring had sprung!  I have both growing in my garden and am [...]]]>  

My favorite spring flowers are tiny purple violets and aromatic lilies of the valley, both magical announcements of spring, particularly in my native Minnesota.  After long winters of ice, snow and sub-zero temperatures, these amazing and delicate blossoms boldly proclaimed that, indeed, spring had sprung!  I have both growing in my garden and am thrilled with their appearance each year…the violets arrive first and the lilies of the valley follow.

My favorite spring flavors are similar in a sense to the flowers; fresh, aromatic, and bold.  Consider the lemon.  What a difference it creates when combined with fresh garlic and sprigs of hardy rosemary in roast spring lamb or chicken!

Lemon Curd (also known as lemon cheese or lemon butter) is a marvelous concoction that I use in so many ways.  We will be using it in our Lemon Mousse with Fresh Berries at our Mother’s Day Brunch on Sunday, May 12.  The following recipe was given to me by an innkeeper in Victoria, BC, and I use it constantly.  Try it as a filling for tarts and cakes, in fruit parfaits, or as a spread for toast or hot scones.

 

LEMON CURDlemon mousse

6 eggs, well beaten

1 3/4 cups sugar

1/2 cup fresh lemon juice

1/4 cup butter

1 teaspoon finely grated lemon rind

 

Combine all ingredients in the top of a double boiler.  Cook over simmering water, whisking steadily, until the mixture thickens and the temperature reaches about 160 degrees F.  Pour the hot mixture into shallow container, cover with plastic wrap, (touching the curd, no air) and refrigerate until ready to use.

Makes about 3 cups.

End of Summer At Selah Inn http://www.selahinn.com/2012/08/hello-world/ http://www.selahinn.com/2012/08/hello-world/#comments Fri, 03 Aug 2012 01:23:00 +0000 http://www1.selahinn.com/?p=1 After a glorious but short summer, the geraniums have been wintered over in the shed and replaced by dried blossoms of hydrangea and sedum in patio pots, and now it’s time for evergreen garlands, twinkling lights and precious Christmas ornaments to adorn Selah Inn.  For 16 years now, I have begun the process of holiday [...]]]> After a glorious but short summer, the geraniums have been wintered over in the shed and replaced by dried blossoms of hydrangea and sedum in patio pots, and now it’s time for evergreen garlands, twinkling lights and precious Christmas ornaments to adorn Selah Inn.  For 16 years now, I have begun the process of holiday transformation at the Inn with a spicy cup of tea and Christmas carols in the background, as I haul my trusty ladder from room to room (I’m height-challenged) and empty out bags and boxes of magic.  Soon every treasure will be placed in its home for the next 5 weeks of Christmas. 

I love this time of year.  I love decorating the Inn for our guests to enjoy.  I love to bake and roast and create wonderful foods in our kitchen for our guests to savor.  I love to fashion as best I can, the feeling of “coming home to Christmas” for those who step across our doorstep.  Perhaps in this busy time you’re able to carve out a day or two and spend some quality time with your honey in one of our guestrooms.  No time to spend overnight?  We have Special Events that we invite you to ~ our annual Christmas Tea and a Holiday Dinner.  Coming up is a January Culinary Workshop. If you would like to plan your own event here at the Inn, just give us a call…we love parties!  Also, New Years Eve is a great time for dinner at the Inn!

This seemed like the perfect occasion to launch our new website.  We love it and hope you enjoy the new format and great pictures.  I highly recommend Allyn Analytics for exceptional work and huge patience with “untechy” clients like me!  I’m excited about having a blog and look forward to sharing life from Selah Inn!
